These kitchen knives were developed in cooperation with the renowned American chef Thomas Keller. They are forged from Swedish RWL34 Powdered Steel; a high alloy steel known for its excellent edge strength, hardness and corrosion resistance. After a precise heat treatment, these knives achieve a Rockwell Hardness Rating of 62 + / - 2. The structure of the steel gives the knives remarkable edge retention. Bold angles create a focus on the minimalist silhouette.
