This minimises contact between the blade and the cheese and thus makes slicing easier, especially with sticky kinds of cheese like young Gouda. The slicer blade is made of flexible spring steel and sharpened on both sides to produce smooth cuts. The handle, made of cast stainless steel, rests well in the hand, ensuring the right slicing angle.
